Ingredients
  

Dressing
  • 1/2 cup creamy peanut butter
  • 1 tbsp hoisin sauce (can substitute brown sugar)
  • 2 tbsp lime juice
  • 1 tbsp soy sauce
  • 1/4-1/2 cup water (start with 1/4 cup and add until desired consistency)
Noodles & Vegetables
  • 4 oz thin rice noodles such as from Amazon
  • 2 cups cucumber, thinly sliced
  • 2 cups purple cabbage, thinly sliced or use coleslaw mix
  • 1 cup carrot, grated or thinly sliced
  • 1 red bell pepper thinly sliced
  • 1/2 cup cilantro, chopped
  • 1/4 cup fresh mint, chopped
  • 1/2 cup peanuts, chopped (optional)

Method
 

  1. Cook the rice noodles according to package instructions, then drain, rinse, and snip into shorter strands.
  2. Whisk all dressing ingredients until smooth, adding water gradually to reach a pourable consistency.
  3. Combine noodles, vegetables, and herbs in a large bowl, toss with dressing, and garnish with chopped peanuts.

Notes

Adjust water in the dressing for desired consistency and add peanuts for extra crunch.
