Ingredients
  

Banana Base
  • 3 pieces overripe bananas, mashed
  • 4 tbsp melted vegan butter
  • 0.75 cup maple syrup
  • 1 cup unsweetened almond or oat milk
  • 1 tsp vanilla extract
  • 1.5 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 0.25 tsp salt
  • 1.5 cups all-purpose flour (regular or gluten-free)
  • 1 cup old-fashioned rolled oats
  • 4 tbsp melted vegan butter
  • 0.33 cup light brown sugar
  • 2 tbsp ground cinnamon
  • 0.75 cup powdered sugar
  • 2 tbsp melted vegan butter
  • 2 oz softened vegan cream cheese

Method
 

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.
  2. Mix mashed bananas, melted vegan butter, maple syrup, almond milk, and vanilla until combined.
  3. Add baking powder, baking soda, cinnamon, salt, then fold in flour and oats. Mix just until combined.
  4. Pour half the batter into the pan, swirl with cinnamon mixture, add remaining batter, swirl again, then bake 50–60 minutes.
  5. Cool, then spread frosting made from powdered sugar, vegan butter, and cream cheese over the loaf.

Notes

Ensure not to overmix the batter for a tender loaf.
