Ingredients
  

Eggs
  • 12 large boiled eggs
Vegetables
  • 0.33 cup finely diced celery
  • 0.33 cup chopped green onion
  • 0.33 cup sweet pickle relish
Diced Pimentos
  • 4 ounces diced pimentos (drained)
Dairy & Condiments
  • 0.25 cup mayonnaise plus 1 tablespoon
  • 1 teaspoon dijon mustard or yellow mustard
  • 0.5 teaspoon coarse ground black pepper
  • 0.25 teaspoon salt

Method
 

  1. Boil eggs for 10-12 minutes, cool, peel, and coarsely chop.
  2. Combine eggs with diced celery, green onion, relish, pimentos, mayonnaise, mustard, pepper, and salt in a bowl.
  3. Mix gently until well combined.
  4. Serve on a croissant, with crackers, or on a bed of lettuce.

Notes

For a creamier texture, add an extra tablespoon of mayonnaise.
