Method
- Boil eggs for 10-12 minutes, cool, peel, and coarsely chop.
- Combine eggs with diced celery, green onion, relish, pimentos, mayonnaise, mustard, pepper, and salt in a bowl.
- Mix gently until well combined.
- Serve on a croissant, with crackers, or on a bed of lettuce.
Notes
For a creamier texture, add an extra tablespoon of mayonnaise.
