Ingredients
  

Protein
  • 2 pounds boneless skinless chicken breasts
Nuts
  • ½ cup sliced raw almonds
Dairy & Condiments
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 cup red grapes (quartered)
Vegetables
  • 2 celery ribs celery ribs (diced)
  • 3 green onions green onions (sliced)
Herbs & Seasonings
  • 2 tablespoons finely chopped parsley
  • 1 tablespoon finely chopped tarragon
  • Juice of 1 lemon lemon juice
Seasoning
  • to taste Salt and pepper

Method
 

  1. Boil chicken in water for 15 minutes, then cool and dice.
  2. Mix mayonnaise, Dijon mustard, lemon juice, salt, and pepper to make the dressing.
  3. Combine diced chicken with almonds, grapes, celery, green onions, parsley, and tarragon.
  4. Pour dressing over the mixture and fold gently.
  5. Refrigerate for 30 minutes before serving.
