Ingredients

  • 2 lbs ripe heirloom or vine-ripened tomatoes chilled slightly for easier slicing
  • 1 lb fresh mozzarella (preferably buffalo mozzarella or burrata) pat dry and slice or tear
  • 1 large bunch fresh basil leaves tear larger leaves if desired
Oils & Condiments
  • 2-3 tablespoons extra virgin olive oil high quality
  • 1-2 tablespoons balsamic glaze optional, but highly recommended
  • to taste flaky sea salt (e.g., Maldon)
  • to taste freshly ground black pepper

Method
 

  1. Slice the tomatoes into ¼ to ½-inch thick rounds and arrange on a platter.
  2. Pat the mozzarella dry and slice into similar rounds or tear into pieces; tear burrata if using.
  3. Scatter basil leaves over the tomatoes and mozzarella.
  4. Drizzle olive oil and balsamic glaze over the salad; season with sea salt and black pepper.
