Tuscan Salmon with Parmesan Cream Sauce

Ingredients

  • 1 tbsp butter
  • 1 tbsp olive oil
  • 4 pieces salmon fillet
  • salt and pepper salt and pepper to taste
  • 2 cloves garlic
  • 3-4 slices sun-dried tomatoes (packed in oil, sliced)
  • 125 ml dry grape juice plus 1 tbsp vinegar
  • 1 cup double/heavy cream
  • 50 g parmesan cheese
  • 30 g fresh spinach

Method
 

  1. Pat the salmon dry, season with salt and pepper. Sear in butter and olive oil until golden and crispy, about 6-7 minutes. Remove and set aside.
  2. Add garlic and sun-dried tomatoes to the same pan, sauté briefly, then deglaze with grape juice and vinegar. Simmer until reduced by half, about 5 minutes.
  3. Stir in heavy cream and Parmesan cheese until smooth. Add spinach, return salmon to pan, and simmer for 5 minutes. Season with salt to taste.

Notes

Ensure not to overcook the salmon for best texture.
