Method
- Pat the salmon dry, season with salt and pepper. Sear in butter and olive oil until golden and crispy, about 6-7 minutes. Remove and set aside.
- Add garlic and sun-dried tomatoes to the same pan, sauté briefly, then deglaze with grape juice and vinegar. Simmer until reduced by half, about 5 minutes.
- Stir in heavy cream and Parmesan cheese until smooth. Add spinach, return salmon to pan, and simmer for 5 minutes. Season with salt to taste.
Notes
Ensure not to overcook the salmon for best texture.
