Sweet Potatoes
  • 2 large sweet potatoes boiled and mashed
  • 4 tablespoons unsalted butter melted
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3 large eggs separated
  • 1/4 teaspoon salt
  • 1/4 cup milk

Method
 

  1. Preheat oven to 375°F (190°C) and grease a soufflé dish.
  2. Boil sweet potatoes until tender, then peel and mash.
  3. Mix mashed sweet potatoes with butter, sugar, vanilla, spices, milk, and egg yolks.
  4. Beat egg whites with salt until stiff peaks form, then fold into the mixture.
  5. Pour into dish, bake for 25-30 minutes until puffed and golden.
