Dough
  • 2 cups all-purpose flour

  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup ricotta cheese
  • 1/2 cup mini chocolate chips
  • 1/4 cup chopped pistachios
For dusting

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment.
  2. Cream butter and sugar until fluffy, then add egg and vanilla.
  3. Mix in dry ingredients, then fold in ricotta, chocolate chips, and pistachios.
  4. Drop dough onto baking sheet, bake 12-15 minutes, cool, then dust with powdered sugar.
