- Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45 minutes.
- Heat olive oil in a skillet, add butter beans, and season with garlic powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes until crispy.
- Let sweet potatoes cool slightly, then slice open and fluff insides.
- Top sweet potatoes with butter beans mixture and garnish with parsley. Serve warm.
