Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes
  • 1 can (15 oz) butter beans drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • to taste salt and pepper salt and pepper
  • for garnish none fresh parsley, chopped

Method
 

  1. Preheat oven to 400°F (200°C). Pierce sweet potatoes and bake for 45 minutes.
  2. Heat olive oil in a skillet, add butter beans, and season with garlic powder, smoked paprika, salt, and pepper. Cook for 5-7 minutes until crispy.
  3. Let sweet potatoes cool slightly, then slice open and fluff insides.
  4. Top sweet potatoes with butter beans mixture and garnish with parsley. Serve warm.

Notes

For extra flavor, add a squeeze of lemon or a drizzle of balsamic vinegar before serving.
