  • 1/4 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped walnuts (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, applesauce, coconut oil, and vanilla.
  3. Whisk together dry ingredients and combine with wet mixture.
  4. Fold in walnuts if using, then pour batter into pan.
  5. Bake for 50-60 minutes; cool before slicing.
