Method
- Cook pasta according to package instructions, then drain and set aside.
- Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper to make the dressing.
- Combine cooked pasta, corn, bell pepper, onion, and jalapeno in a bowl. Pour dressing over and toss gently.
- Add cilantro, toss again, and adjust seasoning as needed.
- Refrigerate for at least 30 minutes before serving.
