Ingredients
  

Pasta
  • 1 pound pasta (any shape)
Corn
  • 2 cups cooked corn kernels
Vegetables
  • 1 red bell pepper red bell pepper, diced
  • 0.5 red onion red onion, finely chopped
  • 1 jalapeno jalapeno pepper, seeded and minced
Dressing
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 0.25 cup freshly chopped cilantro
  • 1 lime juice of 1 lime
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Method
 

  1. Cook pasta according to package instructions, then drain and set aside.
  2. Whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper to make the dressing.
  3. Combine cooked pasta, corn, bell pepper, onion, and jalapeno in a bowl. Pour dressing over and toss gently.
  4. Add cilantro, toss again, and adjust seasoning as needed.
  5. Refrigerate for at least 30 minutes before serving.

Notes

This salad is best enjoyed fresh but can be stored in the refrigerator for up to 2 days.
