  • 4 cups frozen corn kernels (or fresh corn)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 0.5 cup crumbled cotija cheese (optional) optional
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon cumin
  • 1 tablespoon lime juice
  • 0.25 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Tortilla chips, for serving for serving

Method
 

  1. Spray the crockpot with non-stick cooking spray.
  2. Add corn, cream cheese, sour cream, mayonnaise, cheddar cheese, Monterey Jack cheese, garlic, chili powder, smoked paprika, cumin, lime juice, salt, and pepper to the crockpot.
  3. Stir everything together until well combined.
  4. Cover and cook on low for 2-3 hours, stirring occasionally until the dip is hot and bubbly.
  5. Stir in cilantro and cotija cheese (if using) just before serving.
  6. Serve warm with tortilla chips or fresh veggies.

Notes

Adjust the amount of chili powder and smoked paprika to your preferred level of spiciness.
