Method
- Spray the crockpot with non-stick cooking spray.
- Add corn, cream cheese, sour cream, mayonnaise, cheddar cheese, Monterey Jack cheese, garlic, chili powder, smoked paprika, cumin, lime juice, salt, and pepper to the crockpot.
- Stir everything together until well combined.
- Cover and cook on low for 2-3 hours, stirring occasionally until the dip is hot and bubbly.
- Stir in cilantro and cotija cheese (if using) just before serving.
- Serve warm with tortilla chips or fresh veggies.
Notes
Adjust the amount of chili powder and smoked paprika to your preferred level of spiciness.
