Chicken
  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup chopped fresh spinach or thawed frozen spinach
  • 2 cloves garlic minced
  • 1/3 cup cream cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon italian seasoning
  • 1 teaspoon lemon juice

Method
 

  1. Butterfly chicken breasts and season with garlic powder, paprika, salt, and pepper.
  2. Sauté garlic and spinach in 1/2 tbsp olive oil until wilted, then mix with cheeses, seasoning, and lemon juice.
  3. Stuff chicken with spinach mixture and secure with toothpicks. Sear in skillet for 3–4 minutes per side.
  4. Transfer skillet to oven and bake at 375°F (190°C) for 20–25 minutes. Rest before slicing and serving.

Notes

Secure the stuffed chicken well to prevent filling from leaking during cooking.
