Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes, peeled and cubed
  • 1.5 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
Ground Beef
  • 1 pound lean ground beef
  • 1.5 teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
Toppings
  • 1 cup cottage cheese
  • 2 avocados sliced avocados
  • 0.25 cup hot honey
  • Chili flakes
  • Sliced green onions

Method
 

  1. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, pepper, garlic powder, chili powder, and cumin. Roast for 25-30 minutes until tender.
  2. In a skillet, cook ground beef with salt, garlic powder, smoked paprika, cumin, chili powder, and black pepper until browned.
  3. Assemble bowls with roasted sweet potatoes, cooked beef, cottage cheese, sliced avocados, hot honey, chili flakes, and green onions.
