Method
- Heat olive oil in a skillet, season beef, and sear in batches for 2-3 minutes per side. Transfer to slow cooker.
- Melt butter in the same skillet, sauté garlic for 1 minute, then add beef broth, Worcestershire sauce, thyme, and rosemary. Pour over beef in slow cooker.
- Add potatoes to the slow cooker, top with remaining butter, cover, and cook on low for 6-7 hours.
- Adjust seasoning with salt and pepper, garnish with parsley, and serve warm.
Notes
For extra flavor, consider adding a splash of red wine or a dash of paprika.
