Ingredients
  

Meat
  • 2 lbs beef stew meat cut into bite-sized cubes
Vegetables
  • 1 lb baby potatoes halved or quartered if large
  • 4 tbsp unsalted butter
  • 6 cloves garlic minced
  • 0.5 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil
Garnish
  • to taste Fresh parsley, chopped for garnish

Method
 

  1. Heat olive oil in a skillet, season beef, and sear in batches for 2-3 minutes per side. Transfer to slow cooker.
  2. Melt butter in the same skillet, sauté garlic for 1 minute, then add beef broth, Worcestershire sauce, thyme, and rosemary. Pour over beef in slow cooker.
  3. Add potatoes to the slow cooker, top with remaining butter, cover, and cook on low for 6-7 hours.
  4. Adjust seasoning with salt and pepper, garnish with parsley, and serve warm.

Notes

For extra flavor, consider adding a splash of red wine or a dash of paprika.
