Method
- Brown ground beef, add onion and bell pepper, cook until softened.
- Combine beef mixture, beans, corn, tomatoes, taco seasoning, and soup in slow cooker. Stir.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Stir in half the cheddar cheese during the last 30 minutes.
- Top with cornbread batter and remaining cheddar cheese.
- Cook until cornbread is set, about 30-45 minutes.
- Let stand for 10 minutes before serving.
Notes
For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
