  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 15 ounce kidney beans, rinsed and drained
  • 15 ounce corn, drained
  • 10 ounce diced tomatoes and green chilies (like Rotel), undrained
  • 1 packet taco seasoning
  • 10.75 ounce condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 8 ounce cornbread mix, prepared according to package directions

Method
 

  1. Brown ground beef, add onion and bell pepper, cook until softened.
  2. Combine beef mixture, beans, corn, tomatoes, taco seasoning, and soup in slow cooker. Stir.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Stir in half the cheddar cheese during the last 30 minutes.
  5. Top with cornbread batter and remaining cheddar cheese.
  6. Cook until cornbread is set, about 30-45 minutes.
  7. Let stand for 10 minutes before serving.

Notes

For a spicier casserole, use hot taco seasoning or add a pinch of cayenne pepper.
