Ingredients
  

Protein
  • 1 pound raw boneless, skinless chicken breasts cut into 2 ½-inch chunks
  • 2 to 3 cups cooked chicken meat
Vegetables and Fruits
  • 2 ribs celery chopped
  • ½ red bell pepper red bell pepper seeded and chopped
  • 4 to 6 green olives green olives pitted and minced
  • ¼ cup red onion chopped
  • ½ to 1 apple apple cored and chopped
Greens
  • head iceberg lettuce sliced and chopped
Dressing
  • 5 tablespoons mayonnaise
  • 1 tablespoon plum preserves or sweet berry preserve
  • 2 teaspoons freshly squeezed lemon juice
Seasoning
  • to taste Salt Salt
  • to taste Pepper Pepper

Method
 

  1. Poach chicken in boiling salted water, then cool and dice.
  2. Whisk mayonnaise, preserves, and lemon juice to make dressing.
  3. Mix vegetables, fruits, and dressing in a bowl.
  4. Add diced chicken to the mixture and fold gently.
  5. Gently fold in chopped lettuce before serving.

Notes

For extra flavor, chill the salad before serving.
