Shepherd’s Pie

Ingredients
  

Mashed Potatoes
  • 2 pounds potatoes peeled and cut into big chunks
  • 4 tablespoons butter
  • 0.25 cup sour cream
  • 0.25 cup milk to ½ cup
  • Salt and pepper to taste
Meat Filling
  • 1 pound ground beef
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 cups frozen peas, carrot, and corn medley
  • 2 tablespoons flour
  • 1 tablespoon tomato paste
  • 0.5 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon rosemary
  • 0.5 teaspoon thyme
  • 1 bay leaf

Method
 

  1. Boil potatoes until fork tender, then drain.
  2. Add butter, sour cream, milk, salt, and pepper.
  3. Mash potatoes to desired consistency. Set aside.
  4. Brown ground beef with onions and garlic. Drain grease.
  5. Add frozen vegetables and cook for 5-7 minutes.
  6. Sprinkle flour over meat and veggies, stir to mix.
  7. Add tomato paste and stir to mix.
  8. Add beef broth, Worcestershire sauce, rosemary, thyme, and bay leaf. Simmer and reduce heat.
  9. Cook uncovered for 10 minutes, adding broth if needed.
  10. Remove from heat. Spread meat mixture in a 9x13-inch baking dish.
  11. Remove bay leaf before adding beef mixture to the dish.
  12. Top with mashed potatoes, making an even layer.
  13. Cool meat filling for 20 minutes before adding potatoes.
  14. Line a baking sheet with parchment paper and set the dish on it.
  15. Bake at 350°F for 30 minutes until golden brown and bubbly.

Notes

For a richer flavor, use bone broth instead of regular beef broth.
