Method
- Boil potatoes until fork tender, then drain.
- Add butter, sour cream, milk, salt, and pepper.
- Mash potatoes and set aside.
- Brown ground beef with onions and garlic. Drain grease.
- Add frozen vegetables and cook for 5-7 minutes.
- Sprinkle flour over meat and veggies and stir.
- Add tomato paste and stir.
- Add beef broth, Worcestershire sauce, rosemary, thyme, and bay leaf. Simmer and reduce heat.
- Cook uncovered for ten minutes, adding broth if needed.
- Remove from heat. Spread meat mixture in a baking dish.
- Remove the bay leaf.
- Top with mashed potatoes.
- Cool meat filling for 20 minutes before adding potatoes.
- Bake at 350°F for 30 minutes until golden brown.
Notes
For a richer flavor, use bone broth instead of regular beef broth.
