Ingredients
  

Meat
  • 1.5 pounds sirloin steak cut into strips
Vegetables
  • 1 cup cherry tomatoes
  • 1 cup bell peppers sliced
  • 1 cup zucchini sliced
Seasonings
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Toss vegetables with 1 tablespoon olive oil, salt, and pepper, then spread on a baking sheet.
  2. Season steak strips with salt and pepper. Arrange on the same sheet with vegetables.
  3. Drizzle remaining olive oil over everything. Roast in the oven for 15-20 minutes until steak is cooked and vegetables are tender.
  4. Remove from oven and serve hot.

Notes

For extra flavor, add garlic powder or your favorite herbs before roasting.
