Meat
  • 1 lb sausage (italian or chicken)
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • to taste salt and pepper salt and pepper
Garnish
  • fresh parsley, chopped parsley (for garnish)

Method
 

  1. Peel and cube the sweet potatoes.
  2. Cook the sausage in a skillet with olive oil until browned, about 5-7 minutes.
  3. Add sweet potatoes and cook for 5 minutes.
  4. Mix honey, garlic, soy sauce, paprika, salt, and pepper; pour over the mixture.
  5. Cover and simmer for 10 minutes until sweet potatoes are tender. Garnish with parsley and serve.

Notes

Adjust salt and pepper to taste. For a spicier kick, add red pepper flakes.
