- Mix smoked paprika, onion powder, garlic powder, salt, black pepper, and cayenne in a bowl.
- Brine chicken in buttermilk, hot sauce, and half the spice blend for at least 3 hours.
- Heat oil to 325°F. Coat chicken pieces in seasoned flour mixture.
- Fry chicken in batches for 6-8 minutes per side until golden and internal temp reaches 165°F. Keep warm in oven.
