  • 4 tablespoons smoked paprika
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder
  • 3 tablespoons kosher salt
  • 2 tablespoons coarsely ground black pepper
  • 1 tablespoon italian seasoning
  • 3 teaspoons ground cayenne pepper
buttermilk brine
  • 2.5 cups buttermilk
  • 0.25 cup louisiana hot sauce
fried chicken
  • 4 lbs whole chicken cut into pieces bone-in, skin-on
  • 3 cups all purpose flour
  • 1 cup cornstarch
  • 5 teaspoons baking powder
  • 4 cups peanut oil

Method
 

  1. Mix smoked paprika, onion powder, garlic powder, salt, black pepper, and cayenne in a bowl.
  2. Brine chicken in buttermilk, hot sauce, and half the spice blend for at least 3 hours.
  3. Heat oil to 325°F. Coat chicken pieces in seasoned flour mixture.
  4. Fry chicken in batches for 6-8 minutes per side until golden and internal temp reaches 165°F. Keep warm in oven.

Ensure oil temperature is maintained for crispy chicken. Rest chicken briefly before serving.
