Ingredients
  

Roast Beef
  • 3-4 lb beef roast top round, sirloin tip, or chuck roast
  • 2 tablespoons olive oil
  • 1 large onion thickly sliced
  • 3 cloves garlic minced
  • 1 cup dry red grape juice or extra broth
  • 1 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
Gravy
  • 2 tablespoons all-purpose flour or cornstarch
  • 2 tablespoons butter

Method
 

  1. Preheat oven to 325 °F (165 °C).
  2. Season meat with salt and pepper on all sides.
  3. Sear beef in olive oil for 3–4 minutes per side.
  4. Place onion and garlic in roasting pan, then add roast.
  5. Deglaze skillet with red grape juice and pour over roast.
  6. Add beef broth, Worcestershire sauce, thyme, and rosemary. Cover.
  7. Roast for 2½ to 3 hours, until desired doneness.
  8. Let it rest for at least 15 minutes.
  9. Strain cooking liquid and warm in saucepan. Mix flour with water and whisk into liquid.
  10. Simmer for 5–7 minutes, then stir in butter.
  11. Slice roast and serve with gravy.
