Method
- Scrub, peel, and cut potatoes into one-inch cubes. Boil for 10 minutes until firm-tender.
- Drain and cool potatoes. Chop onions and celery, then add to potatoes.
- Hard-boil eggs, cool, peel, and chop or mash. Add to the mixture.
- Mix mayonnaise, vinegar, mustard, relish, salt, pepper, and paprika. Combine with potato mixture.
Notes
Chill before serving for best flavor. Adjust seasoning to taste.
