Ingredients
  

Potatoes
  • 6 medium potatoes around 3 pounds
Onion
  • 1 onion chopped
Celery stalk
  • 1 celery stalk chopped
Eggs
  • 4 Eggs hard-boiled and peeled
White distilled vinegar
  • 2 tablespoons white distilled vinegar
Mayonnaise
  • 1 cup Mayonnaise
Yellow mustard
  • 1 Tablespoon Yellow mustard
Pickle relish
  • 2 Tablespoons pickle relish
Salt and pepper
  • to taste salt and pepper
Spring onions
  • 2 slices spring onions sliced
Paprika
  • 1 teaspoon paprika

Method
 

  1. Scrub, peel, and cut potatoes into one-inch cubes. Boil for 10 minutes until firm-tender.
  2. Drain and cool potatoes. Chop onions and celery, then add to potatoes.
  3. Hard-boil eggs, cool, peel, and chop or mash. Add to the mixture.
  4. Mix mayonnaise, vinegar, mustard, relish, salt, pepper, and paprika. Combine with potato mixture.

Notes

Chill before serving for best flavor. Adjust seasoning to taste.
