Ingredients
  

Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
Wet ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
Topping
  • 1/4 cup brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup chopped pecans

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix dry ingredients in a bowl; combine wet ingredients in another, then combine.
  3. Fold in chopped pecans, pour batter into pan.
  4. Mix topping ingredients and sprinkle over batter.
  5. Bake for 60-70 minutes, cool before slicing.

Ensure not to overmix the batter for a moist texture.
