Ingredients
  

Wet ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, oil, applesauce, sugars, and eggs until smooth.
  3. Combine dry ingredients and gradually add to wet mixture, mixing just until combined.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 60-70 minutes until a toothpick comes out clean. Cool before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract or a pinch of cloves.
