Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix pumpkin, oil, applesauce, sugars, and eggs until smooth.
- Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt.
- Combine dry and wet ingredients; fold in nuts if using.
- Pour batter into pan and bake for 60-70 minutes. Cool before slicing.
