Ingredients
  

Wet ingredients
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1/2 cup applesauce
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 large eggs
Dry ingredients
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix pumpkin, oil, applesauce, sugars, and eggs until smooth.
  3. Combine dry ingredients; gradually add to wet mixture, mixing just until combined.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 60-70 minutes; cool before slicing.

Notes

For extra flavor, add a teaspoon of vanilla extract.
