  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas bananas mashed
  • ¾ cup sugar
  • 1 egg egg
  • cup melted butter
  • 1 teaspoon vanilla extract
  • ½ cup brown sugar
  • ¼ cup flour
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter for topping

Method
 

  1. Preheat oven to 350°F (175°C). Mash bananas and mix with sugar, egg, melted butter, and vanilla.
  2. Whisk flour, baking soda, and salt; fold into wet mixture. Mix brown sugar, flour, and cinnamon for topping.
  3. Work cold butter into topping; fill muffin cups halfway, sprinkle topping, and press lightly.
  4. Bake for 20-25 minutes, then cool for 5 minutes before serving.

Notes

Use ripe bananas for best flavor and moisture.
