- Preheat oven to 350°F (175°C). Mash bananas and mix with sugar, egg, melted butter, and vanilla.
- Whisk flour, baking soda, and salt; fold into wet mixture. Mix brown sugar, flour, and cinnamon for topping.
- Work cold butter into topping; fill muffin cups halfway, sprinkle topping, and press lightly.
- Bake for 20-25 minutes, then cool for 5 minutes before serving.
