Method
- Preheat oven to 350°F (175°C). Line muffin tin.
- Mix mashed bananas, sugar, egg, melted butter, and vanilla.
- Combine dry ingredients and fold into wet mixture.
- Mix brown sugar, flour, cinnamon, and cut in cold butter for topping.
- Fill muffin cups halfway, add topping, and bake 20-25 mins.
- Cool for 5 mins, then transfer to rack.
