Ingredients
  

Batter
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 ripe bananas bananas mashed
  • ¾ cup sugar
  • 1 egg egg
  • cup melted butter
  • 1 teaspoon vanilla extract
Topping
  • ½ cup brown sugar
  • ¼ cup flour
  • 1 teaspoon cinnamon
  • 2 tablespoons cold butter cut into small cubes

Method
 

  1. Preheat oven to 350°F (175°C). Line muffin tin.
  2. Mix mashed bananas, sugar, egg, melted butter, and vanilla.
  3. Combine dry ingredients and fold into wet mixture.
  4. Mix brown sugar, flour, cinnamon, and cut in cold butter for topping.
  5. Fill muffin cups halfway, add topping, and bake 20-25 mins.
  6. Cool for 5 mins, then transfer to rack.
