Melt-in-Your-Mouth Crock Pot Chuck Roast

Main Ingredients
  • 3-4 lb chuck roast
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp olive oil
  • 4 carrots cut into chunks
  • 1 lb baby potatoes
  • 1 onion sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 4 garlic cloves smashed
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1 tbsp cornstarch + 2 tbsp water

Method
 

  1. Season roast with salt and pepper. Sear in skillet 3-4 minutes per side until browned.
  2. Add onions, carrots, and potatoes to the bottom of the slow cooker.
  3. Place seared roast on top of veggies. Add garlic, thyme, rosemary, tomato paste, and Worcestershire sauce.
  4. Pour beef broth around (not over) the roast.
  5. Cook on LOW 8-10 hours or HIGH 4-5 hours until tender.
  6. Remove roast & veggies. Whisk cornstarch slurry into juices. Simmer until thickened.
  7. Shred or slice roast and serve with veggies, topped with warm gravy.

Notes

For extra flavor, consider adding a packet of dry onion soup mix to the slow cooker.
