Method
- Season roast with salt and pepper. Sear in skillet 3-4 minutes per side until browned.
- Add onions, carrots, and potatoes to the bottom of the slow cooker.
- Place seared roast on top of veggies. Add garlic, thyme, rosemary, tomato paste, and Worcestershire sauce.
- Pour beef broth around (not over) the roast.
- Cook on LOW 8-10 hours or HIGH 4-5 hours until tender.
- Remove roast & veggies. Whisk cornstarch slurry into juices. Simmer until thickened.
- Shred or slice roast and serve with veggies, topped with warm gravy.
Notes
For extra flavor, consider adding a packet of dry onion soup mix to the slow cooker.
