  • 1 pound dried red kidney beans rinsed
  • 8 cups water
  • 1 pound smoked beef sausage such as Andouille, sliced
  • 1 large onion chopped
  • 1 green bell pepper chopped
  • 2 stalks celery chopped
  • 4 cloves garlic minced
  • 1 teaspoon Creole seasoning
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon cayenne pepper optional
  • 1 bay leaf bay leaf
  • to taste Salt and black pepper
  • Cooked white rice for serving

Method
 

  1. Combine beans and water in a pot. Simmer for 1-1.5 hours, until tender.
  2. Brown sausage in a skillet, then set aside, leaving fat.
  3. Cook onion, bell pepper, and celery in the skillet until softened. Add garlic and cook until fragrant.
  4. Add vegetables to the beans. Stir in Creole seasoning, thyme, cayenne pepper (if using), and bay leaf. Season with salt and pepper.
  5. Add sausage back to the pot. Simmer for at least 30 minutes, stirring occasionally.
  6. Remove bay leaf. Mash some beans to thicken.
  7. Serve over rice. Enjoy!

Notes

For a richer flavor, use homemade chicken or vegetable stock instead of water.
