Method
- Preheat oven to 375°F (190°C).
- Mix olive oil, lemon zest, lemon juice, garlic, herbs, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Place chicken in a roasting pan and roast for 90 minutes until cooked through.
- Let rest for 10 minutes before carving and serving.
Notes
Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
