  • 1.5 kg whole chicken preferably bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 lemon lemon zested and juiced
  • 3 cloves garlic minced
  • 2 tablespoons fresh herbs (rosemary, thyme) chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mix olive oil, lemon zest, lemon juice, garlic, herbs, salt, and pepper.
  3. Rub the mixture all over the chicken, including under the skin.
  4. Place chicken in a roasting pan and roast for 90 minutes until cooked through.
  5. Let rest for 10 minutes before carving and serving.

Notes

Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F (74°C).
