Bananas
  • 2 pieces ripe bananas
Almond Flour
  • 2 cups almond flour
Eggs
  • 3 large large eggs
Unsweetened Almond Milk
  • 1/4 cup unsweetened almond milk
Erythritol or Keto Sweetener
  • 1/4 cup erythritol or preferred keto sweetener
Baking Powder
  • 1 teaspoon baking powder
Baking Soda
  • 1/2 teaspoon baking soda
Vanilla Extract
  • 1 teaspoon vanilla extract
Cinnamon
  • 1/2 teaspoon cinnamon
Salt
  • 1/4 teaspoon salt
Chopped Walnuts or Pecans
  • 1/2 cup chopped walnuts or pecans (optional) optional

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mash bananas, then mix with eggs, almond milk, sweetener, and vanilla.
  3. Combine dry ingredients and add to wet mixture; mix until just combined.
  4. Fold in nuts if using, then pour batter into pan.
  5. Bake for 45-50 minutes, cool, then slice and enjoy.
