  • 1 pound baby carrots
  • 3 tablespoons unsalted butter
  • 2 tablespoons honey
  • 3 cloves garlic, minced
  • to taste salt and pepper

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Melt butter in a saucepan over medium heat, then stir in honey and minced garlic.
  3. Toss carrots with the honey garlic butter mixture until well coated.
  4. Spread carrots on a parchment-lined baking sheet, season with salt and pepper.
  5. Roast for 25-30 minutes until tender and caramelized, stirring halfway.
  6. Garnish with parsley if desired and serve warm.
