Ingredients

  • 3–4 pieces boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 4 oz reduced-fat cream cheese
  • 6 large whole wheat tortillas
  • 1/3 cup light sour cream (for topping)
  • 1 tbsp chili powder (adjust to taste)
  • 1 cup low sodium chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 cup shredded Mexican cheese blend
  • Chopped for garnish cilantro

Method
 

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Cook chicken until fully cooked, then shred. Mix with garlic, cream cheese, chili powder, and chiles.
  3. Fill tortillas with chicken mixture, roll up, and place seam-side down in dish.
  4. Simmer chicken broth with chili powder, pour over enchiladas, top with cheese, and cover with foil.
  5. Bake for 20–25 minutes, then top with sour cream and cilantro before serving.

Notes

For extra flavor, add a squeeze of lime before serving.
