  • 8 oz penne pasta

  • 1 lb lean ground beef
Vegetables
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
Canned Goods
  • 1 can (15 oz) diced tomatoes (with juices)
Broth
  • 1 cup low-sodium beef broth
Dairy
  • 1/2 cup plain Greek yogurt
  • 1/4 cup grated Parmesan cheese
Seasonings
  • 1 tbsp Italian seasoning

Method
 

  1. Cook the penne pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant. Add ground beef and cook until browned. Stir in tomatoes, broth, Greek yogurt, Parmesan, Italian seasoning, salt, and pepper. Simmer briefly.
  3. Add cooked pasta to the skillet and toss to combine. Serve garnished with fresh herbs.

Notes

For extra flavor, top with additional Parmesan or fresh herbs.
