  • 4 tablespoons enchilada sauce
  • 4 oz rotisserie chicken breast shredded
  • 4 tablespoons taco seasoning or 1 package
  • 1 cup red bell pepper diced or sautéed
  • 1/4 cup canned corn drained
  • 1/4 cup black beans rinsed and drained
  • 1 oz shredded cheese Mexican blend or cheddar
Garnishes
  • Chopped cilantro for garnish
  • Avocado slices for garnish
  • Greek yogurt or sour cream for garnish

Method
 

  1. Blend cottage cheese and enchilada sauce until smooth.
  2. Mix cottage cheese mixture with shredded chicken and taco seasoning.
  3. Add bell pepper, corn, and black beans; stir to coat.
  4. Divide mixture into bowls, top with shredded cheese, and microwave 1-2 minutes.
  5. Garnish with cilantro, avocado, and sour cream or Greek yogurt. Serve and enjoy!
