Method
- Heat oil in a large Dutch oven over medium-high heat.
- Add beef and cook until browned, about 5 minutes. Then add onion and garlic, cook until translucent.
- Add carrots and potatoes, cook for 5 minutes. Stir in beef broth, tomato paste, and thyme.
- Bring to a boil, then reduce heat to low and simmer, covered, for 2 1/2 hours. Season with salt and pepper.
Notes
For extra flavor, add a splash of red wine or a bay leaf during simmering.
