  • 1 1/2 cups gluten-free rolled oats
  • 1 cup almond flour
  • 1/2 cup peanut butter or other nut/seed butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 2 tablespoons almond milk or other non-dairy milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • 1/2 cup vegan chocolate chips

Method
 

  1. Line an 8x8 inch baking pan with parchment paper.
  2. Combine oats, almond flour, peanut butter, maple syrup, coconut oil, almond milk, vanilla, and salt in a bowl.
  3. Mix well until a dough forms.
  4. Fold in the vegan chocolate chips.
  5. Press the mixture firmly into the prepared pan.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Cut into bars and enjoy!

Notes

For a nut-free version, substitute sunflower seed butter for the peanut butter and use oat milk.
