Method
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- Mix mashed bananas and melted coconut oil.
- Add honey, eggs, and vanilla; stir well.
- Combine dry ingredients and gradually mix into wet ingredients.
- Fold in nuts if using, pour batter into pan, and bake 50-60 minutes.
- Cool for 10 minutes, then transfer to wire rack.
