Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1/3 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups whole wheat flour
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup dark chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. Mix mashed bananas, honey, applesauce, coconut oil, eggs, and vanilla until combined.
  3. Whisk together baking soda, salt, cinnamon, and flour; add to wet ingredients and stir gently.
  4. Fold in nuts and chocolate chips if using, then pour batter into pan.
  5. Bake for 50-60 minutes until a toothpick comes out clean. Cool before serving.

Notes

For extra flavor, add a dash of nutmeg or cloves.
