  • 1 pound ground beef
Vegetables
  • 2 medium sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 1 clove garlic minced
  • 1 diced bell pepper
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • to taste salt and pepper salt and pepper
  • 2 tablespoons olive oil
Garnish
  • optional fresh parsley for garnish

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and bell pepper; sauté 3-4 minutes until soft.
  3. Add garlic; cook 1 minute until fragrant.
  4. Increase heat, add ground beef; cook until browned, 5-7 minutes.
  5. Stir in sweet potatoes, paprika, cumin, salt, and pepper; cover and cook 15-20 minutes until tender. Garnish with parsley if desired.

Notes

Ensure sweet potatoes are cooked through for best texture.
