Ingredients
  

Crust
  • 1.5 cups gluten-free graham cracker crumbs
  • 6 tablespoons melted unsalted butter
  • 0.25 cup granulated sugar
Filling
  • 2 packages cream cheese, softened 8 ounce packages
  • 1 can sweetened condensed milk 14 ounce can
  • 0.33 cup lemon juice
  • 1 teaspoon vanilla extract
Optional Toppings
  • fresh berries
  • chocolate shavings
  • whipped cream

Method
 

  1. Combine graham cracker crumbs, melted butter, and sugar.
  2. Press into cupcake liners in a muffin tin.
  3. Beat cream cheese until smooth.
  4. Add sweetened condensed milk and mix.
  5. Stir in lemon juice and vanilla.
  6. Spoon filling into liners.
  7. Refrigerate for at least 4 hours.
  8. Top with your favorite toppings before serving.

Notes

For a richer flavor, use full-fat cream cheese.
