Ingredients
  

Bananas
  • 3 pieces ripe bananas, mashed
  • 2 large eggs
  • 1/4 cup melted coconut oil or unsalted butter
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1.5 cups gluten-free all-purpose flour
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Method
 

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. Mix mashed bananas, eggs, melted coconut oil, honey, and vanilla until combined.
  3. Whisk together baking soda, salt, cinnamon, and flour; add to wet ingredients and mix gently.
  4. Fold in walnuts or chocolate chips if using, then pour batter into pan.
  5. Bake for 50-60 minutes, cool in pan 10 minutes, then transfer to wire rack.

Notes

Use ripe bananas for best flavor and sweetness.
