  • 2 cups frozen corn, thawed
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell pepper (any color)
  • 0.5 cup red onion, finely chopped
  • 1 cup sour cream
  • 0.5 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • to taste Salt and pepper
  • 3 cups Fritos corn chips

Method
 

  1. Combine corn, tomatoes, cheese, bell pepper, and onion in a bowl.
  2. Whisk together sour cream, mayonnaise, lime juice, chili powder, salt, and pepper.
  3. Pour dressing over the vegetables and toss gently.
  4. Add Fritos chips just before serving and toss lightly.
  5. Chill for at least 30 minutes before serving.

Notes

For extra crunch, add Fritos just before serving to prevent sogginess.
