Ingredients
  

Sweet Potatoes
  • 2 medium sweet potatoes baked and mashed
  • 3 large eggs separated
  • 1/4 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter melted
  • powdered sugar for dusting

Method
 

  1. Preheat oven to 375°F (190°C) and butter a soufflé dish.
  2. Bake sweet potatoes for 45 minutes, then peel and mash.
  3. Mix egg yolks, sugar, milk, vanilla, cinnamon, nutmeg, and salt until smooth.
  4. Combine mashed sweet potatoes and melted butter with the yolk mixture.
  5. Beat egg whites until stiff peaks form, then fold into the mixture.
  6. Pour into dish, bake for 25-30 minutes, then dust with powdered sugar before serving.

Notes

Ensure not to overmix the egg whites to keep the soufflé light and fluffy.
