Ingredients
  

Sweet Potatoes
  • 4 medium sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup melted butter
  • 1/2 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup mini marshmallows optional, for topping

Method
 

  1. Preheat oven to 350°F (175°C). Peel and boil sweet potatoes until tender, about 15-20 minutes.
  2. Drain and mash sweet potatoes until smooth. Mix in brown sugar, melted butter, milk, eggs, vanilla, cinnamon, nutmeg, and salt.
  3. Pour mixture into a greased 2-quart baking dish. Top with mini marshmallows if desired.
  4. Bake for 30-35 minutes until set and lightly golden. Let cool slightly before serving.

Notes

For a richer flavor, add a pinch of nutmeg or cinnamon on top before baking.
