Ingredients
  

Pot Roast
  • 3-4 pound beef chuck roast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • 1 (1 ounce) package dry onion soup mix
  • 1/2 cup beef broth
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water

Method
 

  1. Sear seasoned roast in olive oil until browned.
  2. Place onion, carrots, and celery in the crock pot.
  3. Place roast on top of vegetables. Sprinkle with garlic.
  4. Combine soup, onion soup mix, and broth; pour over roast.
  5. Cook on low for 8-10 hours or high for 4-5 hours.
  6. Remove roast and shred with forks.
  7. Strain liquid into a saucepan.
  8. Whisk cornstarch and water to make a slurry.
  9. Simmer liquid, whisk in slurry, and cook until thickened.
  10. Return roast to pot, pour gravy over, and serve.

Notes

For a richer flavor, add a splash of red wine to the broth mixture.
