Method
- Sear seasoned roast in olive oil until browned.
- Place onion, carrots, and celery in the crock pot.
- Place roast on top of vegetables. Sprinkle with garlic.
- Combine soup, onion soup mix, and broth; pour over roast.
- Cook on low for 8-10 hours or high for 4-5 hours.
- Remove roast and shred with forks.
- Strain liquid into a saucepan.
- Whisk cornstarch and water to make a slurry.
- Simmer liquid, whisk in slurry, and cook until thickened.
- Return roast to pot, pour gravy over, and serve.
Notes
For a richer flavor, add a splash of red wine to the broth mixture.
