Ingredients
  

Meat and Seasonings
  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1 cup water
Salad Ingredients
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup shredded cheddar cheese
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup Doritos crushed
  • 1 cup salsa
  • 1 cup sour cream

Method
 

  1. Cook ground beef in a skillet until browned, then add taco seasoning and water. Simmer for 5 minutes.
  2. Combine chopped lettuce, cherry tomatoes, black beans, corn, and cheddar in a large bowl.
  3. Add cooked beef to the salad and toss gently.
  4. Just before serving, add crushed Doritos, salsa, and sour cream. Toss lightly.
  5. Serve immediately for maximum crunch.

Notes

For extra flavor, add chopped cilantro or a squeeze of lime.
